Tofu with tomato jelly, green pesto and sesame seeds
Ingredients
4 portions
Tofu
400 g tofu
100 g soy sauce
Preparation
Slice tofu, place in a vacuum bag, pour in soy sauce and vacuum seal. Marinate for 2-3 hours.
Tomato jelly
200 gr VERA tomato passata
15 g of soaked gelatine flakes
50 ml extra virgin Vera oil
Salt, white pepper, sugar
Preparation
Passata, season with spices and strain. Heat a few tablespoons of the mousse and dissolve the gelatine. Combine everything together and place in the fridge to set for 12 hours.
Assemble the finished dish on a plate with Vera green pesto, roasted white and black sesame seeds and fresh herbs.
