
Green jackfruit vegan burger
Ingredients
Jackfruit burger
1 tin of VERA green jackfruit
1 diced red onion
1 clove of garlic finely chopped
2 large tablespoons of sliced fresh coriander
2 tbs. rice flour
2 tbs. breadcrumbs
50 ml oat or soy milk
yellow curry
cumin
ground black pepper
red pepper
smoked salt
For the burgers you will need
4 white bread-rolls
2 avocados or ready-made guacamole
1 jar of VERA dried tomatoes
1 lime
1 jar of VERA grilled peppers
fresh lettuce leaves
BBQ sauce
Preparation
Drain the jackfruit from the marinade and finely pulse-blend some of it in a blender. Pull the remaining part
of it into pieces, place them in a bowl and add the remaining ingredients. Season and knead well into a
smooth paste. Set aside for a while. Grill it or fry in a pan till golden. Slice the rolls, and grill them till crispy. Prepare guacamole from avocados: mash them with a fork, add finely chopped sun-dried tomatoes
and season with lime juice. Serve the grilled burger in a bun, with BBQ sauce, grilled peppers cut into strips, or other favorite extras.
