Dry truffles with jackfruit and black beans
Truffles
2 cans of VERA green jackfruit
1 can of Black VERA beans
100 g fresh coriander
50 g fresh hot pepper
salt
black pepper
yellow curry
Coating
1 egg
flour
breadcrumbs/panco breadcrumbs
Preparation
Shred the drained jackfruit into smaller pieces or gently blend in a blender. Some can be shredded into larger pieces or diced. Drain the beans too and rub 1/2 of the can through a sieve to a smooth puree. Leave the other part of the beans whole. Peel the fresh coriander leaves and finely dice the stems. Mix everything together into a smooth paste, season with spices and add the finely chopped hot pepper. Form truffles of approx. 30-40 g from the prepared mixture. Coat in flour, egg and breadcrumbs or panco. Fry in deep fat until golden brown.
