
Dumplings with green pesto and goat cheese
Ingredients for 4 servings
Dough
400g wheat flour
100g eggs
30g scalded green parsley leaves
20g Vera extra virgin olive oil
2 egg yolks
10g salt
Blend the eggs with the parsley and combine with the rest of the ingredients. Leave to rest.
Stuffing
200g goat cheese
2 egg yolks
60g grated Grana Padano cheese
30g ricotta cheese
Salt, pepper, nutmeg
Prepare the dumplings in a traditional way. Cook for 2-3 minutes in salted water.
Serve with green pesto, Grana Padano flakes and fresh herbs. On top of the dish pour olive oil with
oregano.
