Christmas layered salad
Ingredients:
6 tablespoons of mayonnaise
3 tablespoons of natural yoghurt
2 teaspoons Dijon mustard
1 can of VERA corn
1 can of VERA black beans
1 jar of mini gherkins with VERA seasoning
approx. 250 g cooked beetroot
3-4 Matjas herrings in oil
finely chopped onion
dill for garnish
Preparation:
Start with the sauce - mix the mayonnaise, yoghurt and mustard thoroughly. Cut the herring into small pieces, combine with the onion and set aside in the fridge for the flavours to meld. Now it's time to play with the layers! In jars or bowls, layer herring, black beans, corn, sliced gherkins, grated beetroot and sauce. Finally, sprinkle with dill and you're done!
