
Fluffy omelette with mascarpone, pesto and grilled peppers
Ingredients
grilled peppers
2 eggs
green pesto
mascarpone
Preparation
Crack the eggs, season with salt and pepper.
Pour into a heated frying pan with a little butter.
Add the mascarpone and pesto - let them melt gently.
Cover and wait for the eggs to set.
Transfer to a plate and garnish with grilled peppers.
