
Vege stew with chickpeas
Ingredients
bottle of VERA tomato passata
a jar of VERA chickpeas
a few tablespoons of VERA red pesto
red onion
red pepper
250g mushrooms
2 cloves of garlic
frying oil
salt, pepper
sweet paprika
smoked paprika
Preparation
Chop the onion and garlic and fry them in hot oil.
Finely chop mushrooms and peppers or blend in a food processor, add to pot and sauté.
Pour in the VERA passata, season with salt, pepper, sweet and smoked paprika and simmer covered.
Add the VERA chickpeas and the VERA red pesto, simmer for a while longer to allow the flavours to combine.
Serve with rice, sprinkled with fresh parsley.
