Vegetarian paella with artichokes

- 500 g Arborio round rice
- 1 jar of artichokes in VERA marinade
- 1 can of green peas in VERA marinade
- 2 carrots
- 1 white onion
- 2 cloves of garlic
- 1 large tomato
- 2 red peppers
In addition, the following will be useful:
- frying oil (5 tablespoons)
- 1 litre of water or vegetable stock
- 1 teaspoon salt
- 2 tbsp ready-made or home-made (saffron/curcuma, sweet paprika, chilli, smoked paprika, rosemary) paella seasoning

Heat the oil in a deep pan and then throw in the diced vegetables. After a minute, add the artichoke quarters that were drained earlier. Once the vegetables have softened, pour in the bouillon or boiling water. Let the vegetables cook for about 5 minutes and then add the rice. Remember to mix everything together well. Cook the paella over a medium heat for 15 minutes, adding the peas at the end. At the end, simply season it to taste and add fresh parsley to enjoy its wonderful and original flavour.
