Asparagus with sun-dried tomatoes
Ingredients:
1 bunch of fresh asparagus
2 cloves of garlic
70–80 g of VERA sun-dried tomatoes in oil
sun-dried tomato oil
sea salt and freshly ground pepper
harissa or chilli flakes (optional)
Preparation:
Rinse the asparagus and snap off the woody ends. Cut the sun-dried tomatoes into strips and crush the garlic. Pour a little of the oil from the tinned tomatoes into a frying pan and fry the garlic and tomatoes for a moment. Add the asparagus and fry for a few minutes until they are slightly crisp. Season with salt, pepper and a little harissa or chilli. Perfect on its own, with bread or as a side dish for a barbecue
