Autumn pumpkin with chickpeas

Ingredients for the stuffing

1 onion
400g diced pumpkin
can VERA chickpeas
canned tomatoes
turmeric, sweet paprika, cumin, salt, pepper
basmati rice
roasted almonds
coriander or parsley

Preparation
Pour a tablespoon of VERA oil into a heated frying pan, add the finely chopped onion, fry until browned. After a short while, add the pumpkin. Caramelise the whole thing. Then add the drained can of VERA chickpeas and pour in the can of tomatoes. Season everything with turmeric, sweet paprika, cumin, salt and pepper. Take your time - let the flavours combine slowly.
In a separate pot, simmer a cup of basmati rice, adding a pinch of turmeric for colour. When ready, add it to the pan and stir gently until the whole thing turns into a fragrant, warming mosaic. Season to taste and add greens in the form of parsley or coriander.
