Chickpea cutlets
Ingredients
1 can of VERA chickpeas (drained, slightly rinsed)
1 small onion, finely chopped
2 cloves of garlic, crushed
1 egg
breadcrumbs or panko
parsley
salt and pepper to taste
oil or frying oil
Preparation
Mash the chickpeas with a fork (or put them in a blender if you prefer a smooth texture). Add the onion, garlic, parsley, egg and seasoning. Add breadcrumbs if the mixture is too loose. Form cutlets, roll in flour, dip in aquafaba and finally in breadcrumbs/panko. Fry in hot fat until golden.
