
Gnocchi with pistachio pesto
Ingredients
VERA's aromatic basil-pistachio pesto,
VERA gnocchi,
VERA sun-dried tomatoes
creamy burrata
Preparation
Add a few spoonfuls of pesto to a bowl, throw in the tomatoes, a splash of oil and a pinch of salt. Cook the gnocchi (it literally takes a minute!), toss in the sauce, stir and transfer to a platter. Finish with fresh herbs and burrata for the top. Cut it open before serving and let the centre spill over the dish.
