Crispy olives in panko
Ingredients:
1/2 glass of panko
1/2 glass of flour
1 egg
Olive oil or cooking oil
Oregano
Harissa (or your favourite spices)
VERA olives (drained and thoroughly dried)
Preparation:
In three small bowls, prepare: flour, a beaten egg, and panko mixed with oregano and harissa. Coat each olive first in the flour, then in the egg, and finally in the seasoned breadcrumb mixture. Fry in hot oil for about 2 minutes – until the coating turns golden brown. Serve straight away – ideally with homemade aioli or thick Greek yoghurt.
Pro Tip: For a richer flavour, you can add grated Parmesan or a pinch of smoked paprika to the breadcrumb coating – this will give the olives a unique aroma and a delicately spicy flavour.
