One-pot pasta with chicken and sun-dried tomatoes
Ingredients
1/2 jar of VERA sun-dried tomatoes
400 g chicken breast
5 cloves of garlic
2 cups of Lumachine pasta (or other favourite)
4 cups of broth (can be poultry or vegetable)
3 teaspoons of sweet paprika
50 ml cream 30%
Parmesan cheese (to taste and sprinkle)
Salt, pepper
3 handfuls of fresh baby spinach
Preparation
Heat the oil from the sun-dried tomatoes in a large pot. Fry the chicken seasoned with salt and pepper until golden. Add the chopped sun-dried tomatoes, garlic and peppers. Fry for a while until the aromas are released. Throw in the pasta, pour in the broth and simmer covered for about 12 minutes. Stir from time to time to ensure nothing burns. When the pasta has softened, add the cream, fresh spinach and grated Parmesan cheese. Stir until the spinach is slightly wilted. Serve hot, sprinkled with extra Parmesan cheese.🧀
